Gajar Ka Halwa (without Mawa and Milkmaid)




















Ingredients:

1 cup Red Carrots
1 cup Milk
1 cup Sugar
2 tbsp Ghee
11/2 tsp Elachi Powder (Cardamon Powder)
Cashews, Raisins, Almonds as per your requirement.


Preparation:

  1. Wash and peel the carrot skin, grate it finely.
  2. Heat the pan, add 1 tsp ghee, and fry only the raisins.
  3. Remove the raisins, to this add the grated carrots ( no additional ghee to be added).
  4. Saute the carrots to remove the raw flavor (the aroma and the color of the carrot would say it all) 
  5. Add milk and cook on a medium flame till the milk is reduced to half the quantity, add sugar, you can also add the dry fruits like cashew and almonds at this stage. Stir the same on a continuous basis ensuring the bottom does not stick. Once the mixture thickens add Ghee and Elachi powder. Cook for another minute. 
  6. Garnish with slivers of almond and fried raisins.
  7. Serve Hot 


Psst Psst: There are lot of quick ways to prepare the Gajar ka halwa, you may steam the grated carrots and then cook it in a broad pan with milk or the jaldi 5 minutes way is to pressure cook the carrots, milk, 1 tbsp ghee for 1 whistle and then transfer the mix to a pan and add sugar, the remaining ghee and dry fruits. You may also add 50 gms of khoya or milkmaid.
