Pad Thai noodles is traditional Thai dish which I have modified a little to create vegetarian version.
Coriander or cilantro for garnishing
Ingredients:
200 gm flat rice noodles
1 cup tofu/ paneer cubed and shallow fried
1 cup thinly sliced carrots
1/2 cup thinly sliced capsicum
1 cup thinly sliced cabbage
1 cup spring onion greens
1/2 cup spring onion whites
1 tbsp chopped garlic
2 tbsp coarsly chopped pea nuts
2 tbsp oil

For dressing:
1/4 cup lime juice
1 tbsp palm sugar or brown sugar
1 tbsp red chilli sauce
2 tbsp soy sauce/ fish sauce
Mix all dressing together

Preparation:
- Boil the noodles for 7-8 min and cool them by adding cold water , make sure noodles are separated well.
- Add oil to non stick pan , once oil is hot , add garlic and saute it for a minute , now add spring onion whites and saute it for 2 minutes.
- Add all other veggies and a pinch of salt and let it cook for couple of minutes, do not overcook veggies, let them keep their crunch.
- Now add dressing mixture to it and mix well for a minute, add your noodles and mix it well, add chopped peanuts and tofu and stir it quickly.
- Serve it hot garnished with cilantro or coriander.
